Job Description

The General Manager is responsible and accountable for administration, operation, and direct management of EMPRESS M Napa Restaurant.

Responsibilities and Duties

Provide leadership, vision and direction to staff, coach, mentor and train staff, conduct performance evaluations, organize staff schedules and maintain employee records.

Assess staffing needs, manage staffing levels and actively participate in the hiring process.

Control purchases and inventory, negotiate prices and contracts, develop preferred supplier lists, review and evaluate usage reports and take corrective action as necessary.

Ensure compliance with all applicable laws and regulations and adherence to liquor control policies and procedures.

Maintains operations by preparing policies, standard and security operating procedures; implementing production, productivity, quality, and patron-service standards; determining and implementing system improvements.

Ensures that all equipment and services are maintained and repaired in a timely manner.

Confers with Executive Chefs, Beverage Manager and other personnel to plan menus and related activities such as dining room, bar, and special events.

Inspects food and food preparation to maintain quality standards and sanitation regulations.

Maintains patron satisfaction by monitoring, evaluating, and auditing food, beverage, and service offerings; initiating improvements; building relationships with preferred patrons.

Reviews financial transactions and monitors budget to ensure efficient operation, and to ensure expenditures stay within budget limitations. Estimates food consumption and purchases or requisitions foodstuffs and kitchen supplies.

Reviews menus, analyzes recipes, determines food, labor, and overhead costs, and assigns prices to menu items. Directs food apportionment policy to control costs.

Attracts patrons by developing and implementing marketing, advertising, public and community relations programs; evaluating program results; identifying and tracking changing demands.

Other duties and responsibilities as assigned.

Knowledge & Experience

College or university program certificate; or equivalent combination of education and experience.

Work experience in food and beverage management.

Knowledge in alcoholic and non-alcoholic beverages.

Working knowledge of food preparation and presentation.

Experience in staff management and development.

Knowledge and experience in Micros, Microsoft Office programs, Generally Accepted Accounting Principles, and Administrative Procedures.

Experience in analyzing financial data, planning and forecasting.

Possess strong verbal and written communications.
